on several different projects which we have been handling for our clients we have noticed that the functionality for an editor to be able to copy a page contents and structure is not available any longer. Have this feature been removed?

Are you talking about the ability to copy content from one locale (language) to another? If so, that is still there, but only when you add a new locale to a record. The per-field copy feature was removed because it was rarely used, but if you add a new locale, it should ask you if you want to copy the contents from another one. Does that help at all?
There is also this plugin: Locale Duplicate - Plugins — DatoCMS
Or did you mean some other type of copying? Could you please clarify if so, and maybe provide some details or an example?

I think you were talking about the button that existed right below some fields to copy content across locales right?
If thats the case, I updated the plugin above Locale Duplicate - Plugins — DatoCMS and now you can add that to the fields you chose in your configuration
